Viticulture standards

  Amelographic characteristics

The description of Vitis varieties and species using morphological characteristics has been the focus of many works by distinguished amelographs. The definition of these distinctive characeristics is the work of the  “Vine Selection” Experts group of the OIV. Descriptive sheets of characteristics, translated into four languages (French, German, English, Spanish), makes up a common reference for theOIV, UPOV (Union Internationale pour la Protection des Obtentions Végétales) and the IBPGR (International Board for Plant Genetic Resources). All the experts of these organisations, based on these prescriptive works,  will now be ensured to speak the same language, which should  from now be instrumental to gaining knowledge of the genetic heritage of Vitis.

Description of world vine varieties

Based on the Code od descriptive characteritics os Vitis varieties and species which determined 128 characteristiczs of a Vitis varieties or species, the ides O.I.V. obtained the more or less complete descritpion of a large number of world varieties, depending on the possibilities of each work centre. With this publication, the OIV seeks to offer high quality international viticulture information. The publication is made up of sheets which can be completed with the introduction of new characteristics notably with the possibility of re-organising the order of the sheets or the replacement of the sheets.

International list of vine varieties and their synonyms

Within the framework of the missions entrusted to the OIV,  hamonisation for designating vine varieties and the identification procedures are necessary for the development of international trade for wine and vines and vine plants. Aussi, l'O.I.V. s'est attaché à dresser la liste des variétés de vignes et à identifier celles-ci par référence aux usages des différents pays. Du fait de la diversité de ces usages, il n'est pas suffisant de dresser une liste, aussi complète soit-elle, des noms des variétés, encore faut-il établir les correspondances des diverses désignations dans les différents pays. Ainsi, on atteindra plus de clarté dans l'identification des variétés de vigne. La destination de la présente liste est à deux fins, d'une part la désignation des variétés dans les échanges de plants de vigne et, d'autre part la désignation des vins issus des différentes variétés.

Oenological Standards

International Oenological Codex 

The International Oenological Codex compiles the description of the principle chemical products, organic or gas used to make and store wine. The conditions for their use, the instructions and limits for their usage are set by the International Code of Oenological Practices. The authorisation for their usage is subject to domestic laws. Identification characteristics and purity degree of these products are described and detailed in addition to the minimum required efficiency to be qualified as set out in the "International Oenological Codex". The definition or a formula synonym of each product is provided. The molecular weight, general characteristics, particularly  solubilities, are likewise provided. In order to avoid errors, simple identification means are indicated. Each monograph indicates research carried out to reveal and measure impurities and their acceptable limits. These limits have been set for some of these monographs.

International Code of Oenological Practices

In accordance with the provisions of the Agreement of 3 April 2001 establishing the International Organisation of Vine and Wine (OIV) which replaced the International Vine and WIne Office created by the Agreement of  29 November 1924 modified, the member countries of the OIV approved the following provisions related to the definition of vitiviniculture products, accepted or not accepted oenological practices and treatments.
This technical legal reference document is focused on the standardisation of products in the vitivinicultural sector to be used as a base to establishing national or supra-national regulations and on involvement in international trade.

Compendium of International Methods of Analysis of Wine and Musts

The Compendium of International Methods of Analysis of Wine and Musts was published for the first time in 1962. It was re-edited in 1965, 1972, 1978, 1990 and again in 2000, by integrating complmentary texts approved by the General Assembly and established yearly by the Sub-commission of Methods of Analysis and Appraisal of WInes.
This edition includes all the texts approved by the General Assembly made up of represntatives of the member governments of the O.I.V., revised and updated since 2000. The Commendium plays an important role in the harmonisation of methods of analysis. Many viticultural countries have introduced these definitions and methods into their own regulations.

Compendium of Methods of Analysis of Spirited Beverages

The Compendium of International Methods of Analysis of Spirited Beverages, alcohol and aromatic fraction of beverages was established by the Sub-commission of Methods of Analysis of the OIV and was then approved and published in 1994. The vast majority of these methods have been validated, either through usage, or as already approved methods of the Compendium of International Methods of Analysis of Wine and Musts.
This edition includes all the texts approved in 1994 by the General Assembly made of representatives of member governments of the O.I.V.
With regards to wine, this compendium plays an important role in the harmonisation of methods of analysis. fraction aromatique Many viticultural countries have introduced these definitions and methods in their own regulations.

Economy standards

International standard for the labelling of wine and spirits of vitivinicultural origin

This standard is a recommendation of the O.I.V. to the member states. The objective is to facilitate international trade and to ensure straight forward information to consumers. The standard established by the Codex alimentarius on labelling foodstuffs and beverages was at the roots of this standard. Provisions concerning obligatory indications must be placed on the labels for pre-packaged wines to be sold to consumers in addition there are optional indications left to the discretion of the operators or the States. These indications were adopted  by the 63rd, 64th, 65th, 68th, 72nd, 73rd and 83rd General Assemblies in 1983, 1984, 1985, 1988, 1992, 1993 and 2003, as the Regulations and Quality Control and the Commission III work group progressed.

International Standard of Wine and Spirited beverages of Vitiviniculture Origin Competitions

The increasing numbers of international wine competitions has led the OIV to revise its 1978 regulation by setting a real international standard, which guarantees the fairness of international competitions. This includes the definitions of products, rules for good practices, tasting sheets, rules for the calculation and bestowal of medals, and the procedures enabling the proper appreciation of quality vitivinicultural products.

The International Standard of Spirited Bevergaes of Vitivinicultural Origin Competitions applies to spirited beverages of the following vitivinicultural origin:- wine spirits- grape marc spirits- grape spirits- raisin spirits- brandy/weinbrand- wine lees spirits.

Management of wine cellar and distillery waste

The objective of this publication is to answer questions asked by professionals of the world vitivinicultural sector who are faced with treating wine cellar and distillery waste.
Environmental protection is longer an additional constraint for the vitivinicultural sector but rather has become overtime a logical step in the wine making process. This document completely reviews management of wine cellar and distillery waste by indicating how to evaluate the pollutional load and how to reduce waste quantity and concenrtration at the source.
Numerous works carried out throughout the world and particularly by OIV experts have given rise to this new scientific and technical guide book, which provides a real summary of the management of wine cellar and distillery waste field.

The objective of OIV scientific and technical guide books is to make available for those people interested studies, documents, works of experts groups. Without this publication, these works would remain confidential even though they may interest a large number of people.

In-depth studies have been made on lead in wine by OIV experts and these works are part of a work programme focused on continuing these studies in order to progressively lower lead limits in wine.
Neither the OIV nor its member countries are responsible for the contents of publication. Only resolutions voted by the General Assembly are official.

The objective of OIV scientific and technical guide books is to make available for those people interested studies, documents, works of experts groups. Without this publication, these works would remain confidential even though they may interest a large number of people.

The objective of this publication is to provide information and items to reflect on concerning the beneifical effects of moderate wine consumption in the prevention of cardiovascular disease. Numerous works have been carried out throughout the world and particularly by OIV experts who drew up this document.

Wine consumption: what risks? what benefits?

The risks and benefits of wine consumption were the focus of discussions which took place during the international conference organised by the O.I.V. on 16 June 1999 within the framework of Vinexpo. The reports presented herein are very much topics of current interest for the O.I.V. , which attaches importance to the scientific nature of information and presentations given in the field.

Summary and conclusions of the F.A.O. intergovernmental group on wine consumption and health

Within the cooperation framework developped with the F.A.O., the intergovernemental group for vitivinicultural products of the F.A.O. with the assocation of the OIV, highlighted questions related to wine consumption and health at the sixth session in September 1994 in Santiago in Chile.
In order to better understand and to make available solid scientific information, the work group requested three experts to gather information based on research.
